This is our first coffee from Mark at Khipu. Originally connecting on Instagram, we cupped six coffees from Mark's offering, with this microlot from producer Elmer Cruz standing out on the table. We then met at Cafe Culture (trade show) a few weeks later, where we learned more about Khipu and what Mark is trying to achieve with his work in Peru.

This coffee goes through an extended double fermentation process, where Elmer ferments the cherries for 72 hours before pulping them and fermenting again for another 48 hours. He then washes them three times before drying them for 15 to 20 days in a solar dryer.
