At Ninth, we explore different brew methods for every coffee we release. This helps us find the perfect espresso or filter recipe that showcases the flavours we were excited about on the cupping table. When it comes to filter brewing, we like to start with one recipe and refine it for optimum flavour on each brew. We recommend you do the same when brewing a new coffee.

Golden Ratio

The 'golden ratio' is simply your starting point; the ideal proportions of coffee to water. The Specialty Coffee Association (SCA) recommends a standard ratio of 1:18 (coffee : water), but we've found our sweet spot is closer to 1:16.66. It delivers a fuller, sweeter, and more complex cup.

Water Temperature

Water temperature plays a big role in how your coffee tastes. We brew between 94-97°C. Use hotter water (around 95-97°C) for denser, washed coffees - they need a bit more heat for full flavour extraction. For softer, more processed coffees (like natural or anaerobic), slightly cooler water (around 94°C) helps highlight sweetness and prevents bitterness.

Grind Size

Our go-to grinder is the Comandante C40, usually starting around 24 clicks. Adjust from there - fewer clicks mean a finer grind and slower flow, bringing out more intensity. More clicks yield a coarser grind and quicker flow, offering a lighter taste. Tweak until it's just right for your preference.

Quick Brew Guide (Orea Brewer)

Here's a simple step-by-step Orea recipe for 200g:

  1. Prepare your setup: Place a paper filter in your Orea dripper, rinse it with hot water, then discard this water.

  2. Weigh and grind coffee: Use 12g coffee beans ground medium-fine (around 22 clicks).

  3. Bloom the coffee: Add about 40g water, stir gently, and let it bloom for 30 seconds to release gases.

  4. First pour: At 30 seconds, gently pour water until reaching 120g, moving in circles.

  5. Final pour: At around 1:15 mins, pour water up to a total of 200g.

  6. Let it drain: Total brew time should be about 2:30–3:00 mins.

  7. Serve and enjoy: Give it a swirl, pour, and enjoy your freshly brewed cup.
