This decaffeinated coffee comes from Huila, Colombia, a region renowned for its rich terroir and high-altitude coffee farming. The beans are decaffeinated using the Ethyl Acetate (EA) method, which combines water and naturally derived EA to remove caffeine while preserving the coffee's delicate flavors.

The decaffeination process involves steaming the beans to open their pores, then soaking them in the EA solution, which bonds with the caffeine. Afterward, the coffee is steamed again to remove any traces of EA and then dried and polished for export.

The result is a balanced cup with notes of toffee, cacao, and orange zest, highlighting the meticulous care taken throughout the process.
