Elias and Shady Bayter started growing coffee at El Vergel Estate in 2006, shifting from avocados after prices dropped to unsustainable levels. They soon became known for experimental processing and their Sugarcane decaf—Condor—caught our attention.

Grown at 1,450 masl in Fresno, this washed yellow and red caturra blend is decaffeinated nearby at Descafecol in Manizales – a super low carbon footprint in comparison to many decaf coffees from Colombia.

El Vergel is our go-to decaf for espresso. Expect caramelised sugar, citrus, and a hint of marzipan.

Origin Huila, Colombia

Huila is one of Colombia's best-known coffee regions. High elevations, steep terrain and fertile soils create conditions for slow cherry development, helping build sweetness, structure and balanced acidity.

Producer Smallholder Producers

This coffee represents a group of smallholder producers across Huila rather than a single estate. The coffees are selected for sweetness, structure and consistency before decaffeination, helping preserve plenty of character in the final cup.

Variety Castillo, Caturra

Castillo and Caturra are well suited to Huila's climate and elevation. Together they bring natural sweetness, balanced acidity and a clean structure that holds up well through the decaffeination process.

Process Washed, Sugarcane Decaf

After washed processing at origin, the coffee is decaffeinated using ethyl acetate derived from fermented sugarcane. The process gently removes caffeine while retaining sweetness, body and clarity, keeping the coffee tasting like coffee rather than a compromise.

Notes Caramel, Marzipan

Caramel sweetness and marzipan lead the cup, backed up by chocolate and soft fruit. It's balanced and full-bodied, with a clean finish and plenty of sweetness for espresso.
