Red Sparrow comes from Red Dragon Estate in Baoshan, Yunnan, and is produced entirely from fully ripe Catimor cherries. The lot follows a restrained anaerobic natural process that brings out a clean, fruit forward profile while keeping the structure balanced. This coffee played a key role in shifting perceptions of Yunnan Catimor, showing that with careful cultivation and processing it can deliver clarity and sweetness at a high level.

Expect bright pineapple, layered chocolate notes and a distinct boozy depth that reflects the slow, controlled fermentation. This is a versatile roast suited to both filter and longer yield espresso.
