Khipu have helped find some of our favourite coffees each year and this coffee is no exception to the rule. In fact, we think this is our best release yet - Finca La Trinidad.
Alexander Robles Loaiza and his family's finca are situated at 1800-1900 masl in Cusco. The farm spans 3 hectares and cultivates specialty coffee varieties, including Geisha, Catuai, and Sidra. A natural anaerobic fermentation process, where cherries ferment in sealed tanks for six days followed by a 45-60 day shade-drying period before milling, enhances this coffee's complexity.
Finca La Trinidad surprises you each time you brew it. If you are looking for an experience of wonderfully balanced tropical and stone fruit acidity - with an air of 'je ne sais quoi' sweetness - then look no further. It might sound crazy, but notes of Apricot, Lychee, and Marshmallow immediately spring to mind for us. What do you think?
